Hello. What an awesome project. Something I’d like to think about trying. Here’s a link that might be helpful.
Whatever you do, the tops coats of polyurethane must be a marine or spar varnish, interior grade (low VOC).
Kitchen counters get more use and abuse than any others and have to be scrubbable.
Hot pans will scorch the wood- so trivets are in order.
