I’m not sure that a pivot mechanism will go past 120 degrees because it will hit the jamb set?
You can buy regular butt hinges that provide full 180 degree openings and use the existing holes.
I know this isn't what you asked for, but if you really want the doors to disappear, you might want to consider a pocket door. You have to open the wall to make it work, which is a pain, but the door disappears into the wall completely. We have several in our tiny home and they've made a huge difference. You could get the same benefit by installing a barn door that slides. It doesn't have to be rustic, but you do need room on either side of the door to slide...if that's tight then pivot is the best way to go. Good luck!

I agree with Kim, pocket doors are the best and huge problem solvers. But if it's an exterior door, you'll need specific hinges and/or hardware for the pivot

My client got an apartment in a 1910 apartment building, the whole thing is done in quartersawn oak..... but the huge closet has a pivot door this big, with the original full murphy bed on the otherside in the closet that pivots out into the main room. Very cool.... but I bet it weighs a couple hundred pounds.
