You can use one or the other. Cannot use both. Both are wood sealers individually.
Linseed oil takes a long time to dry. If you use polyurethane before it is completely dry, you can get a haze in your finish. Just be sure the linseed oil is completely dry.

Hi Pat, here are some instructions on wood. Hope this is helpful.. Stay well Search Results
Apply the first coat with a brush, roller or cloth. 10 to 15 minutes after application, completely wipe the surface to remove any excess oil. Failure to complete this step will leave you with a sticky surface. 2-3 coats, applied at 12 to 24 hours intervals are necessary for proper protection.Nov 6, 2015

linseed oil will seal the wood so it won't accept the poly
They are two different types of sealers for different results/treatments, one the Linseed oil is just that an oil(soaks into wood treating/sealing it) and the poly is a film/coating - are you placing furniture outdoors? why do you want to do both? here is some reading on finishes https://www.woodmagazine.com/materials-guide/finishes/choosing-best-wood-finish
No, the oil will make the poly bead and it won’t dry.
