Hi Kim the paint will still work and look fine but without any protection Chalk paint will be very hard to clean if not sealed properly and, it could also be stained easily then as well.

Chalk paint that is not sealed with a wax or a poly will scratch easily and absorb wet or oily things that are placed on it, especially oily things. It will not clean well. It won't wear well or look nice if you do not seal it. If you use Dixie Bell Chalk Mineral Paint it does not have to be sealed but it does have to cure for at least 30 days before you should use any item you paint.
It will flake off if not sealed. And if you use wax it has to be rewaxed once a year. Do not use chalk paint on kitchen cabinets, it attracts grease and dust. General Finishes makes a good sealant.
Hi Kim, Most chalk paint brands say you can choose to leave it unsealed too, but I don't recommend it. Chalk paint is very porous and will pick up stains and look a mess in no time if you don't seal it with something. So basically, your choice, but consider that it could look stained over time.
