Hi Sharon. Mineral oil is the preferred method for seasoning wood butcher blocks. Before applying it, warm the oil slightly. It will make it easier to work with. Apply a generous layer of mineral oil with a lint-free rag over the entire surface. And then wipe off the excess. Let it soak in for at least 2 to 3 hours. Then apply wood conditioner by hand. Polyurethane would be a good choice of wood conditioner. Good luck Sharon.

Hello. They sell a dedicated butcher block oil as a proprietary formula or you can use mineral oil which is a pharmaceutical grade oil that commonly you could find over the counter in the pharmacy area.

I would use mineral oil.

Any "nut" oil is food safe. You don't want to cover the wood with a film finish like poly. That will chip off when cutting veggies. Actually I would never cut directly on a butcher block counter. I'd use a cutting board.
