Is it one of these projects that you're looking for? https://www.hometalk.com/search/posts?filter=cedar%20table
I don't why they think cedar isn't suitable for a live edge table, but here in the PNW many woodworkers use cedar..... here is some inspiration.... https://www.google.com/search?sxsrf=ALeKk01DDYVR07A2zjNd8bUJENEErl-_dA:1611809929021&source=univ&tbm=isch&q=pictures+of+live+edge+cedar+tables&client=opera&sa=X&ved=2ahUKEwj7tY7y673uAhVUHDQIHYAXALEQjJkEegQIAxAB&biw=1326&bih=627 if you have a void in the wood you can always fill it with epoxy to strengthen it.
Woodworking tools and skills will be required to pull this off. I recently made douglas fir slab countertops for our kitchen. First you will need to find some slabs, 2" thick. They will have to be dried to 10-12% moisture. They will neeed to be planed ad sized to desired thickness, width and length. make width and length a bit more so final sizing can be done later. You will have to laminate the slabs to get the desired total width of table. This is a great tool for doing the pocket holes for the laminating process. https://www.kregtool.com/shop/pocket-hole-joinery/pocket-hole-jigs/kreg-pocket-hole-jig-320/KPHJ320.html
Once you get the slabs all laminated then alot of sanding will be required. Befor final finish sanding, size you table to the exact size. Finish sanding and apply you preferred finish.
I used a pour on epoxy for our counters

Here's a link with great instructions, although I've read that cedar is not the best option because it's a soft wood.

My husband knows a guy who makes cedar tables. He usually leaves it in it's natural shape and adds legs to it. Then seals with a very hard sealant that has a glass appearance.
Hi Lori, hope this helps you out,
