If you bathroom floor is sinking you have a structural problem. You may need to tear off the entire floor down to the floor joists to see what is going on and make repairs from that point. You don't want to tile over anything until you know what is happening to make the floor sink. If you can't do this yourself you will need to have a contractor come in.
