I would like to gut my bathroom and redo it with a different layout my main concern is how to make the shower pan water tight,

Precast shower pans are definitely less trouble than custom tiled shower floors. Setting the pan securely with good level, support and to drain water properly is important too. We had a learning curve with the leveling cement and drain.
