Good, durable hardwoods for making butcher block counter tops?

Want to make butcher block counters in the kitchen. Will practice with cheap (and scrap) wood to learn. When it's time for making the final product, I want a quality, long lasting counter.

-Durability is most important. My goal is to make and install counters once - the end.

-Cost is an important consideration, as usual. While I am resourceful, I welcome ALL advice in finding quality at a great price.

-Beauty is not a consideration at all at this point. As long as it works for a long, long time, I will be happy. I can always cover it with small appliances and clutter so I won't have to look at it, lol.

I need as many different types of hardwood that will be good for this project so I can find the best supply I can afford. Any tips on where to get my own darned info is most heartily welcomed. Thanks!

Hickory or Pecan, hard Maple, and White Oak (with Red right behind it) are your choices. Ironwood (hophornbeam, Ostrya virginiana) and Osage Orange are both stunning and durable native options, but only if you can start with raw wood, they're nearly impossible to work when fully cured.
