I'd say create a space that will fit the grill plus a few feet to serve as comfortable wiggle room.

Give enough space to not only keep smoke and grease from splattering, but also that the heat doesn't melt your siding.

In my experience you cannot make it too big. If you are close to property lines required offsets may dictate maximum size of your patio. Then it's what makes sense for your budget.

Hopefully you have the grill already, and any other items that could enhance the fun of grilling. If so, arrange those pieces the way you think would work for you. Tape off the "floorplan", and walk through it several times, to test the lay of the land. Make changes as you get a better feel for the space.

You didn't state the size of your grill. Measure off any area for the grill, include room for seating, give yourself a reasonable distance between the house and the grill (at least 6 feet). Are you going to want room for plants, some sort of table to hold drinks, etc, don't forget to include room for people to walk thru and around, any other features you might want to incorporate?

Don't do what we did and use the grill under your roof or near your home. We melted our siding and put black soot on the roof under our porch. No more! Put some pavers outside of the pergola and put the grill there.

We have a similar setup. We used 12" gray pavers. The area is 8'×12', and has room for 2 grills, a small fireplace, a park bench, and a large potted plant. We cemented a large offset umbrella in the corner that covers the whole area without taking up any space. Hope you enjoy your new space as much as we do!
