My sister did this, one side of her island butted up to a wall. She bought two cabinets , she didn't attach them to the floor. And bought a counter top and attached that to the top of them. She allowed for extra over hang on 2 sides so she could put stools under it and use it for seating aslo.

Yes! You can definitely do this. Beadboard will be perfect for the unfinished areas of the cabinets. If the 7 ft is has an overhang, you will need to support it. What are you planning for the top? Butcher block will be basically self-supporting, that's what my island is.
