You have several options
One way to make a water fall is to build your fall face up using the materials you desire. I did it with flat stones making sure that each new layer slanted slightly downward toward the front and was wide enough to accommodate the flow of water. Waterfall foam was used to glue the rocks together and prevent leakage. Then I ran the tube from the pump to the top of the stack and hid it in a stack of smaller flat rock. The water flowed down the waterfall face and landed on gravel which filtered it down below ground into a basin where the pump was.
I also have a waterfall into a pond that we achieved by building a small basin above pond level and allowing a low spot in the basin at the ponds edge. The pump fills the basin and the basin overflows into the pond.
The third way is using a waterfall form that you purchase. I have no experience with that but the theory is the same
