There are plants that you can plant that deer wont touch. Google it. There is a list of them.
Hello Mon, Wow what a beautiful place to live -but a challenging place to garden! I believe the fences need to be at least 8 foot tall which is quite a challenge to construct.
Here’s a couple of helpful links from my MG written exam that may offer some suggestions and help advice. Deer resistant plants will also be a very wise consideration.

Lastly-Your local cooperative extensions office may even have more information please consider giving them a call. These offices are manned by volunteer master gardeners on site there waiting to answer the communities questions that know your local situation quite well.
Master gardeners are required to volunteer back designated hours ( plus continuing education) each year to maintain MG certification -this community outreach and education is their goal.
Google deer fence requirements, you need very tall fencing, often some type of wire or netting. Try to replace your plants with deer-resistant plants, put Irish Spring soap shavings in net bags or old panty hose legs on their favorites. Also, contact your state's cooperative extension for advice.

I just read that hanging chunks of bars of soap near where you don’t want the deer will keep them away. But it sounds like you have an awful lot to cover.
