If it were me, I would freeze the ham itself, thaw and make the salad the day you plan to serve.
The store bought ham salad says it can be frozen. I know several people that freeze it.
If you haven't made the ham salad yet, freeze the ham and make the ham salad when you want later. When we have ham, I leave a meals worth in the fridge, then cut up in ham steaks, and in cubes and dice for casseroles and scrambled eggs and freeze them for later use with my seal a meal and they last in the freezer for a long time with no air in them to allow freezer burn.
Anything can be frozen. The taste will not be degraded. The texture may be affected if there is pasta in the salad. The noodles, if frozen in a liquid (like a mayo or cream-based sauce) will be mushy when thawed out. Put a spoonful of your salad in a small plastic container with a tight lid, and put it in freezer right now. In the morning take it out of freezer and uncover it. If you only put 1 spoonful of the salad in the freezer, it will be defrosted by the time you finish your morning coffee and shower. Then tast it. Then you'll have answered your own question.
