    What kind? I made potato candy for yrs for Christmas. Peel potato & dice cook until done. Drain & smash (like smashed potatoes). Add white powdered sugar a little at a time as it will go watery keep stirring & adding sugar & stirring & add 1/2 teaspoon Vanilla & a pinch of salt, keep adding sugar until almost like pie crust thickness. Roll a small ball size & roll out with rolling pin & if like peanut butter spread it on top & roll up like a rug & cut into 1/2in PCs &
    Put on plate & put in ref. After it gets harder can put in air tight containers. Keep in refrigerator as it will melt if left out. You can make chocolate to. You add the plain cocoa before you start adding the sugar. Its really sweet. You can get other recipes by looking up Irish Potato Candy on internet. A med potato makes a lot. Buy 6 lbs of white powder sugar as it takes a lot of sugar if potato is full of water. If you get it to thick just add a few drops of water. Roll it out on plastic mat with sugar on top. Good luck if you try it. I have been making this for 52 yrs.

    water will dissolve the sugar. just let it sit a bit.
