My white light switches have discolored/yellowed, even though

the plates/covers are still white. Why? Will it happen again if I replace them?

How old are they? Plastic ages and yellows, easy to replace and inexpensive.
You can take them off and paint them or cover with paper and mod podge
Probably a combination of aging plastic and the oils in your hands when you use them. It likely took several years for them to change...you can either replace them every few years or paint them.
Do you smoke? Smoking discolors white things brown.
