Barkeeper's Friend and Mr. Clean magic eraser are my front line of gentle abrasives and a soft touch. You can always go courser if they don't work. Also 400 grit wet/dry sand paper used wet is a possibility.
Daily clean with warm soapy water. If you have a build up, you might try viakal. A friend used it and loved the results. It is also recommended on the Corian website.

Before starting to polish your Corian countertops, you need to clean the countertop as thoroughly as you possibly can. Just clean your countertop as you normally would with the help of water and a cloth. Make sure that you get the entire area of the countertop. Cleaning the countertop will remove any dirt and grime that may cause any damage to the countertop later on.
SandYou can sand your countertop using an automatic sander, or a regular sanding block. The only difference is that a sanding block will give you greater control over what you will be doing. If the surface to be sanded is matte finish, then you will need to use between 180 and 220 grit sandpaper. In case you are sanding a semi-gloss surface, then you will need to use a 400 grit sandpaper. While a high-gloss surface will require you to start with a 400 grit sandpaper and finish with a 600 grit.
Gently sand the Corian countertop that needs to be polished, and make sure to remove all the cuts and scratches. If you’re working on high gloss surface, then go back over everything again with the 600 grit sandpaper so that you can restore everything to the high gloss that you need.
Clean AgainTake a little Corian cleaner on the cloth rags and clean off all the dust, dirt, and grime that was created from the sanding. Clean and wipe everything with the cleaner and rag cloth. After cleaning with the cleaner, rinse the rag and wipe down the countertops again.
PolishOnce the countertop gets dried up, apply some more of the Corian cleaner to one of the polishing pads. Then using a low-speed polisher, buff out the counter. Keep reapplying the cleaner as needed and use a gentle pressure to improve the general look of the countertop. This step will restore the original shine of your Corian countertops.
After this step, change the polishing pads, and add a little amount of polishing compound to the pad. Move in slow gentle strokes and adopt a circular motion to rub the polish into the countertop. Only use a polishing agent that is made specifically to work with Corian. After you have applied the polish, wipe off any remaining excess polish, and allow the surface to countertops to dry completely.

I have always found Method all purpose cleaner to be gentle enough on the Corian, yet robust enough to clean away all food residue without having to scrub vigorously.
