I use various sizes of clear tubs. I use clear so I can see in it without opening it or labelling. For quilting etc I have largest tubs, and smaller ones for other type crafts according to how I use them. For example, I keep a small hand electric power saw in with my pine cones and some spray paint because I cut them to paint and make wreaths

Are you wanting to just store items or do you want a work table inside the closet?
Consider vertical drawers on each side and a roll out cabinet -- or two -- that are countertop / tabletop height -- in the center between the vertical drawers.

Add a full depth shelf above where the rolling cabinet will be placed with open shelving above that. Think: closet office:

Be sure the castors are right for the weight your cabinet will hold.
Edit to add. Sometimes rolling toolboxes can double as craft storage boxes. you might check those.
