Depending upon the size of the room you are using, decide where you want your work surface to be. Not everyone has space to float the table/island in the middle of the room. Then place shelves where they are easily accessible. Any hardware or home improvement center sells a variety of decorative brackets as well as pre cut shelves that you can paint or stain to coordinate with your decor. I suggest using a stud finder to place the shelves where you can screw the brackets into the studs for maximum stability. Here are some links with ideas for you.

It would depend on the type of craft you do, space, and whether you want your shelving on the walls or freestanding. For neat appearances, I would go with free standing shelving that has adjustable shelves then use bins to group like items together.
