Pam: a cheap solution is to take cubbies shelves like these: https://www.homedepot.com/p/ClosetMaid-36-in-W-x-36-in-H-White-Stackable-9-Cube-Organizer-55904/205519326 ...and put them 5-6' apart (turn sideways)
Then take a solid board or door (paint it!) and use the door as a "bridge" between the two shelves.

You’ll need work surfaces that are very durable and easy to maintain, like stainless steel. IKEA sells those. I’d also provide both standing & sitting height work surfaces. Obviously closed storage is paramount. I’d mount a surge/protected outlet strip at each work surface. You’ll need both a draftsman’s lamp and ambient task lighting at each work surface. A magnetic tool holder on the wall is useful.
Think about the crafts you do and their requirements. For example, sewing would need thread and material storage and if you use a serger the thread would need a different area than spools.
Use as much wall space as possible for storage. I prefer cabinets to shelves because you can close the doors if it doesn’t stack neatly.
How large is your space? Will you be doing anything standing or is it all seated? If standing, built a taller space so you don’t have to bed over.
