if you know the deceased fave flower use that, with a bit of filler flowers like a baby breath.
Are these centerpieces going to be stored and re used at a later date or are you making new ones for each funeral?

if your church is anything like ours we have floral arrangement s both faux and live for many occasions. If you're looking for something that you can reuse... white lilies some greenery and some silver bells are a nice touch. Be sure to piggy them in bags afterwards to keep of the dust.
At christmas, my sister gave me a square deep dish with a florist green thing and in it was stuck a nice red candle and a beautiful red bow, and a lot of pine twigs. It was very nice. For a funeral you could use a different color candle and bow.
Candle holders that the candles can be replaced in to light & keep lit as long as desired & allow the immediate family members to each take one with them. It would be like a visual memory candle. Family members like spouse, mother. Father, Children, sisters, brothers. These could be especially comforting & special for the grieving.
Another would be helium ballons in floral atrangements that immediate family members could take with them & in a private meeting, release them together.
Another, small living plants that family members could each take one with them as a symbol of thatthat loved ones life still living with them in their hearts.
One other suggestion: single cut roses in loved ones favorite color in simple vase along with root stimiulator on rose stem & in water with printed instructions on how to root that cut rose & have a living growing memorial to nurture in honor of their loved one.
While each of these cost a little bit, there are businesses who would willing to give at cost rates for this as well as getting people to doNate their little unwanted vases for this purpose.
These are things that could really mean a lot to family members left behind.
Hope this might be of help as I would personally appreciate something like this & from personal present experience, it doesn't look like my Darling Husband will even be with me more than a short few days.
