Cut out of exterior plywood and paint with exterior paint.
Hi ! Use a piece of plywood ! I use a roll of brown shipping paper to draw out the shape . I use painters tape and tape it to my wall , to get a good perspective of size and shape . If the paper isn't wide enough tape 2 lengths together . Once you have the shape and size right , go over your lines with a marker or dark crayon . Then cut it out . Lay it out over the wood , tape in a few areas to keep from slipping . Trace around it using a sharpie . Use a jig saw ($18-40 on Amazon or at home depot ) to cut the wood . Sand your edges , easiest way is to use a sanding sponge . Use acrylic
Craft paint to paint your gingerbread man , paint both sides and the edges a base of brown . Then just paint your "face & icing " on the front ( and sides ?) Using craft paint . Then use a clear coat spray paint to seal it . Use 2 light coats instead of 1 heavy coat ! Make sure to get front , back and sides this will protect your work and make them weatherproof ! Buy a small package of small metal pipe holders . Screw 2 one above the other spaced enough to support a garden stake or reverb . Then place in your yard ! You can clear coat it every couple of years , if needed !
