Does your granite have a lot of "movement" If it does a strong color on your grout may make your walls "fight" the granite pattern. It will also depend on the predominant tones in the rest of the kitchen. My first instinct was grey.
It would depend on the finish of your cabinets and which color in your granite stands out. I might look into a metallic/metal tile. If the pattern in your granite is really busy keep the tiles on the simple side/without pattern or bold texture. Hope this helps.
I would do a light tile, that would compliment the gold & beige , then do a grout in a dark color. Without seeing it, I couldn't say wheter to go with a brown or black. Be daring !!!
I would go with something on the neutral side, something like the first four links. Go with a light grout color to match your tiles, don't go dark, it will look dirty. Whatever you use, make sure to seal the entire backsplash so it will be easier to keep clean.

Or you could use this one as an accent on a neutral field tile. https://www.houzz.com/product/5906582-12x12-roman-collection-burnt-russet-glass-tile-single-sheet-contemporary-mosaic-tile
As a lazy but tasteful person, I would go mid-depth color. You dont want the grout to be the focus, and you don’t want dirt/grease to show. Go to the Dollar Store and get some kids color paper. Paint tape some of the colors to the wall and clear package tape a couple of tiles on.
Im a very visual person. I need to see it to make a true decision
I would select a bone colored tile with a black grout. Or a black tile with a bone colored grout. Or black/black or bone/bone. Any of these would look fabulous!
