If you have basic square pot holders that have been burned, badly stained, or worn, you might consider making a template on paper allowing for about 1" larger than the actual pot holder. Cut out your template. Then put your template on the fabric(s) you have selected ( a great way to use up fabric scraps). Pin the template to the fabrics and cut out the fabric. Remove the template. Pin the right sides of the fabric together and sew the 3 sides of them together with a 3/4" seam allowance. Turn rightside out and insert your potholder. Pin shut tucking in the raw edges and sew that seam shut. To prevent shifting of the pot holder inside, sew an "X" or diagonal to diagonal.
If your potholders are different shapes, you could do the same, making the template to match the potholders. Maybe sew a pretty pattern to hold the original potholder in place.

Unless you have leftover fabric for this project IMO I think you can get new pot holders reasonably priced at Home Goods, Target, or Tuesday morning.

Make a pattern of the Pot holder and allow a 1/2" allowance for a seam. Cut out and Sew pieces together right sides facing on 3 sides. Turn it right way out Slip in the original pot holder and sew up the last seam (tucking in as you go).

You can trace the shape onto new fabric and stitch them but considering they’re inexpensive in general, it might be safer to get new ones.
