If you want to stain it, use a walnut or flax seed oil - it is natural and food safe and will naturally darken the wood. To seal it - use a sealer with wax that is used for butcher block - there are lots on the market and any them will work. However, with dry, raw wood - you will need several coats since it will soak in quickly. I do lots of woodworking projects and that is what I use for food safe - anything with beeswax or designed for butcher block.

Use a cutting board oil or butcher block oil to be food safe. The oil will seal it too.
