I don't know if you can make it look like a window with the cabinets above, but I would take out the one light you have and underneath the cabinets I would attach string lighting for all over light, unlike the one spotlight you have that doesn't seem to spread out the light. Usually a fake window is like a picture that goes on the wall. Did you want to put something in front of this area - like a partial wall or do you have removing the cabinets and other things in your mind? Here's one way to do it, but you really need a blank wall. I hope this helps. Wishing you the best.
