I used wooden wainscoting as my backsplash. I sealed it with Polyacrylic. I probably did 4-5 coats. It dries quickly so it was done in an afternoon.
I would use marine spar varnish, sturdy enough for a boat.
If I were going to put wood in a place that may get heat, water, and scrubbing I would opt for Minwax Helmsman Spar Urethane.
One of the DIY guys use cement siding for the back splash, and installed it like shiplap.. it cleans easier than wood and is cement composite which is fire resistant around the stove.
