Hand stitch them onto pillows and hand towels.
Either of those is a good idea. You can gently loosely sew them to make a runner, or display them together or separately in a frame. If you frame them, be sure to use acid-free paper for backing, and either leave the glass off the front, or mat it so the doily does not contact the glass.
If you aren't afraid of damage, I would go table runner. I have a few in my home that are on an end table under a piece of glass I had cut.

I use my grandmother's crocheted doilies on my tables at Christmas time. They look like snowflakes.
