I actually have some cut up jeans I'm planning to do this with. I'm keeping the seat and front zipper intact. I plan to sew across the bottom so that the zipper can still be used and make straps from the legs.
Several ways one: cut the legs off and use a seam ripper to open up the crotch . Then sew the bottom cut a strip from one of the legs to make the shoulder strap. Another is to cut the legs off sew one end now you have a bag to collect plastic bags in. Or cut the legs off open them up and sew them together leaving the pockets on as extra storage.
