You can look into Dixie Belle Paint - it's a chalk mineral paint that doesn't need prepwork and is easy to work with.
We have a log cabin too and the previous homeowner paneled and painted some bedrooms.
my daughter has a log cabin and I think the work she puts on her walls while not exactly lightening the house, goes with the log cabin look. She does have some interior walls that are painted too dark IMHO, I would change that out for a much lighter color. Also you could have light window coverings. Some light colored furnishings and as much natural and artificial light as possible.
