For really rustic, see if you can find old shutters to connect for the headboard.
Get a piece of plywood or similar and apply batting and staple in place, then cover with material and staple to the wood. Attach to the wall and you are done. You should be able to remove the material once a year to wash it also. The simplicity of this is that you can change the headboard to whatever pattern you like.
