Kitchen lighting?
We have an older 1960s kitchen, that we want to do some updates to. We have these under cabinet lights. I feel like we need to keep some kind of fluorescent lighting underneath here since it's wired in, but is there a more modern light that we can use? There's only one other light in the kitchen so these need to stay and actually produce. I know the last one is gross and rusted LOL don't judge

You may be able to replace yours with LED lights, if they don't require a "dedicated dimmer". Check with a better lighting supplier/electrical supply store, taking pictures or your current lights with you.
Go with LED under cabinet lights.
Definitely remove them and put in led undercabinet lights. Also have another ceiling light installed to brighten up the kitchen.
I see a few recommendations for LED lights. That is definitely the way to go. My suggestion is to use LED strip lighting. They tuck neatly under the front underside of your kitchen cabinets so they can not be seen. Be sure to use LED lights/strips with a 3000K value. Anything higher will look too stark to the eye. One other question/suggestion for you. What is above your kitchen? If it is your attic, it is a simple DIY job to cut LED high hats in to give your entire kitchen good illumination. DISCONNECT the power to the last one & rub some Coca-Cola on it. Not tooo much but enough to moisten the rust. Let it sit for a few hours & take a damp clean cloth & wipe clean. Coca-Cola eats rust. It's good for skillets, pots, pans, bumpers on a car, car parts, car repair tools, iron rails & cast iron. It's also good for removing oil stains from your driveway. Just pour & let it sit a couple of hours & rinse clean with your hosepipe. About your lighting, convert to LED & it will give you brighter areas. Take your pics to Lowes & talk with a rep there. They know the best replacements & also explain how to replace them & the wiring I think. GOOD LUCK
I am the official under cabinet LED light installer for my friends, it I easy to work with an install. There are 3 elements to the lighting system, the power converter, the dimmer, and the lights themselves. I recommend the daylight color (5000 K) not the warm white (3000K) because the warm white looks like a yellow light. There are different number of lights per roll of the lighting strip I always buy the higher number so it has more lights closer together. You can always control the brightness with the dimmer.
i have a post half done on this topic so you should see it in the next couple of weeks, I installed under cabinet lights and around the edge of an island. Great accent lighting.
Do a search for LED strip lighting on amazon for parts and you tube for instructions.
