Turn your fabric inside out. Put edge of pillow inside the fabric and up against the fabric fold. Trace around the pillow (making allowances for sides and depth), and cut out fabric allowing about 3 inches of extra fabric (in case you mis-measured). With the fabric inside out, fit around the pillow and pin. Leave one side open for a zipper (for easy washing). Sew around your pins and fit around pillow for a more tailored fit. If that looks good to you, put in your zipper.
If you can, take one apart and use it as a pattern for new ones. If you can't take it apart, then trace around it and add 1" all the way around for a seam allowance. You don't have to worry about the fit if you use the actual case for a pattern. It already has allowance for the height/depth of the pillow.
