Can I space drywall screws 41" apart vertically?
I am making my ceiling higher, and have to add 41" more height to one wall, there are ceiling joists and roof rafters that I will be cutting around. Can I just screw the drywall at the top and bottom? or do I need to put vertical spacers in to screw to?

You need to install studs either every 16" to 24" for the wall extention. Then the drywall goes on nailed every 6" to 12". Also if you plan to insulate the wall extension insulation is stapled or friction fit in between the studs.

I agree with the other poster on the 12-16 inches HOWEVER, thicker sheets of sheetrock probably can handle longer spans without sagging.
I would put furring strips and add supports so that you can screw into boards in between or they will sag.
As William mentioned, you need to frame the wall. You need to follow your municipality's building code. Your drywall needs to be a specific thickness for fire rating purposes and your insulation needs to have a specific R value. You are turning unhabital space and making it habital, which has code requirements. Same goes for any new ceiling structure.
Studs need to be every 12-16 inches for a VA approved loan or 16 to 24 for a conventional loan. You definitely cannot screw just the top or bottom. You wall will sag.
