You could use a Blank Wallplate
I would get someone you know that works with electrical or knows how to change outlets to help you. You should be able to cap off the wires, then take off the phone outlet and fix the wall to look like the rest of the wall. I would leave the wires in the wall, just in case you sell the house and the new owners want a house phone. You can just show them where it is and they can open it up to put another box in since the wires are still in place.

there are plain blank outlet covers (I used one over a cable jack). Otherwise you would have to patch the drywall and repaint.
I agree with the previous response. Remove the plate and cut a piece of wall board to fit the opening. Use the tape for wall board and I believe there is a spray to mimic the "orange peel" on the wall and repaint.
Convert them to USB PORTS.
I didn’t remove as the wall is tiled I just covered with a wide sides message picture.
