How do I update ugly soffits and laminite walls?

Our kitchen needs help! It’s an old home and the previous owner put granite in and new applicances. What we are left with is paneling as soffits, unfinished cabinets, and laminate walls. There is no drywall behind the laminate walls, just particle board (that extends to the backsplash). Our goal is to make it look better without breaking the bank. I’m told the soffits and fluorescent lighting above the sink was done because of the need to access plumbing from up and downstairs. Any advice would be great

I would paint everything. I think the soffits would become less of a feature if the were painted the same color as the ceiling. I would put handles on the access doors that blend in as well.
Clean the laminate with warm soap and water and dry it with a soft cloth. Lightly sand the laminate with 150-grit sandpaper and wipe off any dust with a damp cloth. Use 100 percent acrylic primer to prime entire surface. Use a flash-bond primer that will stick to the laminate and to the paint. Then paint and seal with an Acrylic clearcoat.
The final touch will be to paint the cabinets. Make sure to wash them down and remove all grease before painting.
Hopefully by painting your kitchen, it will be live able for now and you will be able to use the kitchen and learn how you would like to remodel it later.

3/8 inch dry wall tape and past prime and paint. Where ever you have corners or edges use metal dry wall beads. Then feather the beads using dry wall mud and sand and repeat. Pull out old lights and replace with can lighting. Of course with a dimmer switch.
Paint is your best friend. There is speciality paint for laminate. Rustoleum has a kit designed for this application.
I would crown and paint white or maybe a light grey. Also, add some nice stainless steel hardware and a new "fandalier" to make it all look new.

How about covering the soffits with Plastic Mirror on a roll, or Paint it a Bright colour to make it stand out and become a design feature. (The best way to hide something is to make a feature of it)!
