i love dormer ceilings! I would want to highlight them with a small print wall paper on the ceiling and down on the slanted part of the wall or paint the same area with a non-white paint colour. For example if you go with a dark grey on the bottom (non slanted part of the wall) I would do the top part in a lighter grey ...maybe two or three shades lighter...
I would paint it in a contrasting color than your walls to draw the eye upwards and create a focal point.
