How do I protect my Rose Bush for the winter?
Is there anything special I should do to protect my climbing Roses for the winter, wrap in plastic, trim, or both?

What's the best flower/plant to grow in Texas?

No plastic! I use burlap with twine wrapped from bottom up. Twine around tight enough to protect from wind, but not so tight as to cause marks/grooves on the wood.
You can buy a Styrofoam hutch for colder climates, but burlap will work too, you want to protect it from the icy winds

Even in the harshest of winters, roses usually do fine in winter, like the NW Rocky Mt area. If you have a dry climate you may want to mulch them, feed them your old bananas or even just the peels or puree the banana peels and pour around the roots. Do not prune until very early spring or very late winter before the leaves begin to grow. If they are on a sunny side of your home or a wall, the spring time sun will get them well on their way.
You really don't need to protect roses in most gardening zone. They are quite hardy. A bit of mulch won't hurt.
