Make sure you pinch or cut budding stem off, they will still produce.
"Add aged compost to the planting bed before planting and side dress plants with compost at midseason. Aged manure can be added to planting beds the autumn before planting." That is ALL I found about amending the soil or working on the collard plant itself to "refresh it." If it has gone to seed, you are doing something right already! They will most likely grow back!
You can use stems and flowers in stews, being the whole plant is edible. As the plant went to bud you've lost the nutrition the leaves needed in which will become bitter now. Just watch and see of new growth happens and pick leaves in morning or evening when cooler 😃
