How far back can I trim red twig dogwoods?

I have some red twig dogwoods that I have let grow out of control. I am finally at a point where all of the dead branches have been removed and the cluster has been thinned out. But they are over 10 feet tall and I would like something closer to 5-6 feet. Is it possible to just cut off the tops? Can I do this all at once or should I gradually reduce the height? Would this give me a fuller look at the bottom?. Thanks.
