Rhubarb is one of the few plants that you don't really have to take care of. It sort of takes care of it self, but you can make it look prettier by cutting off the flowers before they turn brown. The hollow stem is just how the flower stems are - like onions or chives. Rhubarb like moisture but become completely draught tolerant by the end of their first year in the ground.
Don't pick until the leaves are the size of elephant ears if it's a new plant....takes about 3 years. We put WELL ROTTED horse manure on top in the fall
