The leaves are turning brown or dry and I don't know if I am giving them
enough water or too much. i don't want to loose them since they will be outside all winter long.

You can get a moisture meter in the garden areas that will give you an indication as to whether the soil is still real moist or dry and that may help you regulate the moisture level to what makes them happy and healthy
I will give them more water and perhaps sing to them. (I'm desperate)
