It is important to keep it well watered for the first couple of years. Mulch will also help to minimize water loss and maintain a more consistant water level. To maintain add a shovel of good compost around the crowns each spring.

I've never had much success, but my grandma had one on the north side of the tank house that got huge. Maybe it was cooler there?

Once rhubarb gets going and does well - use it! Freeze it, but just keep pulling it and continue to water throughout the season. It is not unheard of for me to be pulling Rhubarb in September ... but did we have to freeze alot that year! lol
