I grow herbs and lettuce. It doesn't take a lot of lettuce if you plant it in a flat and cut it as it grows (I let mine grow 4" and cut 2" to immediately use it in salads. And I only plant herbs that are annuals, such as basil.

If you don't plan on adding heat to your greenhouse in one of the colder states, then I would advise 'planting' nothing. However, if you have and 'baby' trees/shrubs etc. and want a protective place to keep them, I would put them in the greenhouse and STILL I would surround those plants with bales of hay for even more protection. I have 13 baby Japanese Maples trees in growing pots and they are going into a cold shed over the winter. They have to go through natures process of shutting down for the winter and I only water them every 2-3 weeks. Good luck

Depends on how good your greenhouse is. What heat source do you use? How cold does it get in there? What part of the country are you in?

  • All depends on the quality of the greenhouse and the temperature in it, in the dead of winter. If not insulated or heated, not sure what would grow. At best it could shelter some plants.
