The roots are a rhizome and will continue to spread like a weed as long as it gets water. If you like spicy foods, use it, but wash, peel and hand grind it OUTSIDE. The fumes are so much worse than onion. Use it in mayo or mustard, in mashed potatoes or cauliflower mash. etc. Search for recipes using horseradish. I love it, the heat is different then peppers.

Nancy Maria is right on! We use a older electric blender kept only for horseradish and don't have to hand grind. Use some water in the blender and after ground, add vinegar to help preserve it. And do the whole process outside. We put in small jars, and freeze all but one to use. It will keep long time in freezer and few weeks in fridge.

Whatever you do,do not run a Roto tiller or plow thru it . I had my garden plowed years ago and the horseradish was plowed up and cut into little pieces all over my garden. I had to spray with weed killer to get rid of it.
