What kind of winter weather do you have? If it is cool you could grow any of the spring cool loving veggies like peas, all the different lettuces, etc.
cabbage, kale. Both like cool weather.
I am not sure where you are located but lettuce, and brussel sprouts are a good cold weather crop.
