Growing and Harvesting Sweet Potatoes

Have you ever grow sweet potatoes? They are a garden staple at our house. Simple to grow, easy to care for and high production! They store for months under the correct conditions which means you can enjoy them well into the colder weather.
Every year we grow sweet potatoes- they are one of my favorites! We use purchased slips
They need a long growing season, and should be harvested near the first frost date
Cure them and then store in a cool, dark place for a longer storage length
We are almost done digging the sweet potatoes and have gotten several that are over 3lbs. This one is the biggest weighing 4 lbs!

    Do those of you who grow sweet potatoes "cure" them? I read they needed to be cured and then maintained at a temp and humidity level to successfully store. My attempt at storage was a huge failure. We didn't even try to eat them immediately after harvest because I thought they'd taste bad.

      @Cherylie Yes, you do have to cure sweet potatoes. The ideal is 5 to 10 days in a warm room of 80 to 85 degrees and 80 to 90 percent humidity. This is almost impossible to achieve in a home situation, so try just leaving them on a shaded table outdoors, somewhere out of the rain, for 10 days or so.
