What is the best way to use up my green tomatoes?
The temperatures are starting to drop and I don’t want all my green tomatoes to go to waste. What can I make with them that doesn’t involve canning? Maybe something that can go in the freezer?

You could make fried green tomatoes, I'm sure you could freeze them. I have never made them, but hear they are not bad at all.

I made verde salsa one year it was good.
I cover mine with newspaper and put them in a cardboard box in the basement. They ripen and I use them in salads!
Besides all the previous suggestions.....I love green tomato RELISH and PICKLES. Both canned in the same brine as Bread/Butter flavored pickles.
I use our green tomatoes to make strawberry jam. Here is the recipe:
2 Cups ground Green Tomatoes, juice and all
2 Cups Sugar
1-3oz. package Strawberry Jello
1/2 package Fruit Pectin
Cook tomatoes and sugar for 10 minutes.
Mix together the Fruit Pectin and Jello
Add to cooked mixture and bring to a rolling boil.
Put into jars at once and seal. You may also put the
mixture in plastic freezer containers and freeze.
It turns out great and no one has to know it doesn't have a single berry in the Jam!
Fried green tomatoes or green tomato pie!
Put them in a bowl and cover them, or in a brown paper bag, for a few days. They should ripen.
