How do I get an anti fatigue mat for my odd shaped kitchen sink area?

I have a corner sink and can't figure out how to get an anti fatigue mat to fit. I saw them on a roll that you can buy and cut to fit, but I'd lose the beveled edge (tripping hazard and I'm a clutz😂). I was thinking of getting 2 and joining them together somehow and cutting where I had to in order to make it fit. Any opinions? Very grateful!
