I guess it depends where the counter is - garage, worshop, or kitchen. For a kitchen i would be concerned about it melting if you set a hot pot or pan on it. Could chemicals leach into food if you leave fruits of veggies or something unwrapped for a length of time?

Vinyl flooring will work on a flat surface It will peal up at edges. I have used it for backsplashes. They make a countertop paint that last about 4 or 5 years. There are countertop contractors that can resurface them an lots of colors and design.
